RESUMEN El sector agroindustrial en México es muy importante debido a la gran cantidad de productos que se generan a partir de materias primas agrícolas, su repercusión económica para el país es significativa, y generan un impacto directo en las comunidades rurales en donde se encuentran la mayoría de las materias primas e incluso las industrias. Uno de los productos agroindustriales representativos de México es el mezcal, el cual se produce en los estados de Durango, Guanajuato, Guerrero, Oaxaca, San Luis Potosí, Tamaulipas, Michoacán, Zacatecas y Puebla, todos ellos con denominación de origen reconocida por el Instituto Mexicano de la Propiedad Industrial. Su producción se describe de forma general, haciendo énfasis en los residuos generados durante el proceso de fabricación: las vinazas, las cuales debido a sus características representan para el medio ambiente un problema de contaminación, si éstos son desechados a cuerpos de aguas o suelos sin previo tratamiento. El reaprovechamiento y tratamiento de estos residuos constituyen una oportunidad para aminorar la afectación hacia el medio ambiente, así como la generación de productos de valor agregado. ABSTRACT The agroindustrial sector in México is very important due to the large number of producís that are generated from agricultural raw materials, its economic impact for the country is significant, and they have a direct impact on the rural communities where the majority of raw materials and even industries. One of the representative agro-industrial producís of México is the mezcal, which is produced in the States of Durango, Guanajuato, Guerrero, Oaxaca, San Luis Potosí, Tamaulipas, Michoacán, Zacatecas and Puebla, all of them with denomination of origin recognized by the Institute. Mexican Industrial Property. Its production is described in a general way, emphasizing the waste generated during the manufacturing process: vinasses, which due to their characteristics represent a pollution problem for the environment, if they are discarded to bodies of water or soil without previous treatment. The reuse and treatment of this waste is an opportunity to reduce the impact on the environment, as well as the generation of value- added products.
