La nanotechnologie est un domaine technologique et scientifique multidisciplinaire qui connaît un développement rapide. Dans cet article, les applications actuelles de la nanotechnologie dans les systèmes alimentaires comprennent les systèmes d'administration de pesticides par le biais de nanocapsulations bioactives, les biocapteurs pour détecter et quantifier les agents pathogènes, les composés organiques, d'autres produits chimiques et l'altération de la composition des aliments, les capteurs haute performance et les films minces comestibles pour préserver les fruits et légumes. L'article conclut qu'il est nécessaire de faire une évaluation approfondie des risques des nano-aliments avant leur mise sur le marché.
La nanotecnología es un campo tecnológico y científico multidisciplinario que está experimentando un rápido desarrollo. En este documento, las aplicaciones actuales de la nanotecnología en los sistemas alimentarios incluyen sistemas de administración de pesticidas a través de nanocapsulaciones bioactivas, biosensores para detectar y cuantificar patógenos, compuestos orgánicos, otros productos químicos y la alteración de la composición de los alimentos, sensores de alto rendimiento y películas delgadas comestibles para preservar frutas y verduras. El documento concluye que es necesario realizar una evaluación exhaustiva del riesgo de los nanoalimentos antes de su lanzamiento al mercado.
Nanotechnology is a multidisciplinary technological and scientific field undergoing a rapid development.In this paper, current applications of nanotechnology in food systems include pesticide delivery systems through bioactive nanencapsulations, biosensors to detect and quantify pathogens, organic compounds, other chemicals and food composition alteration, high-performance sensors and edible thin films to preserve fruit and vegetable.The paper conclude that it is necessary to do a thorough risk assessment of nano foods before they are released to the market.
