Abstract

[Resumen] En el trabajo presentado a continuación realizaremos un estudio sobre la capacidad antioxidante en frutos de Rubus idaeus L., conocidos comúnmente como frambuesas. Para este estudio contamos con frambuesas cultivadas mediante dos métodos diferentes: cultivo tradicional/industrial versus cultivo ecológico con el fin de hacer una comparación entre sus frutos y observar si se aprecian diferencias tanto en la cantidad de fenoles totales como en la capacidad antioxidante. También hemos realizado un estudio comparativo sobre las características físicas de los frutos. Para la extracción del concentrado hemos utilizado tres disolventes: Metanol al 80%, acetonitrilo al 70% con 4% de ácido acético y agua, siendo el primero el más eficaz para la extracción en ambos tipos de frutos. Para la determinación de la capacidad antioxidante hemos utilizado un método espectrofotométrico basado en la decoloración de DPPH.

[Abstract] In the document written below we will carry out a study on the antioxidant capacity in fruits of Rubus idaeus L., commonly known as raspberries. For this study we have grown raspberries by two different methods: traditional/industrial farming versus organic farming in order to make a comparison between their fruits and see if differences can be seen both in the amount of total phenolics and antioxidant capacity. We have also made a comparative study of the physical characteristics of the fruits. For the extraction of the concentrate we used three solvents: 80% methanol, 70% acetonitrile with 4% acetic acid and water, being the first the most effective for extracting in both types of fruits. For the determination of the antioxidant capacity we used a spectrophotometric method: related with DPPH discoloration.
