El café ha tenidos distintos y contradictorios significados históricos para América Latina en los dos últimos siglos. Se han alcansado los niveles más altos de tecnificación, de especialización, de rendimientos y de productividad, y se han reproducido las formas tradicionales de policultivo, recolección y procesamiento del café. La reflexión histórica acerca de las interrelaciones entre cambio tecnológico y cambio social en zonas cafetaleras, permite comprender el contexto de las tendencias y fluctuaciones precedentes, y aportar a la discusión de opciones para el futuro próximo y mediato.
Coffee has had different and contradictory historical meanings for Latin America in the last two centuries. The highest levels of technology, specialization, yields and productivity have been reached, and the traditional forms of polyculture, harvesting and coffee processing have been reproduced. Historical reflection on the interrelationships between technological change and social change in coffee-growing areas, allows us to understand the context of the preceding trends and fluctuations, and contribute to the discussion of options for the near and mediate future.
