Abstract

RESUMEN: La pulpa de uchuva fortificada con calcio, oligofructosa y vitamina C es un alimento funcional con grandes beneficios para la salud. Para ello se le adicionó componentes biológicamente activos, como minerales, vitaminas, ácidos grasos, fibra alimentaria y antioxidantes. En este trabajo se estudió la estabilidad de la pulpa enriquecida en diferentes formulaciones, teniendo en cuenta los criterios de incorporación de calcio y vitamina C (20% del valor diario recomendado VDR) y para la oligofructosa (fibra dietaría) en relación 1:1 con el calcio. Los resultados obtenidos mostraron que la pulpa de uchuva fortificada con CMC, ologofructosa, calcio y vitamina C presentó en promedio una estabilidad de 87,7±10,0; una viscosidad de 22,8±7,9; una aw de 0,9863±0; pH de 3,3±0,1; acidez de 1,6±0,1; grados Brix de 13,3±0,7; una densidad de 1,32±0 g/mL y las mejores respuestas sensoriales en cuanto a color, aroma, fluidez y sabor.

ABSTRACT: Cape gooseberry fortified pulp with calcium, vitamin C and oligofructose is a functional food that provides great health benefits. For that, in the cape gooseberry pulp were added biologically active components such as minerals, vitamins, fatty acids, fiber and antioxidants. In this paper it studies the stability of the enriched pulp in various formulations, taking into account the criteria for incorporation of calcium and vitamin C (20% of the recommended daily value VDR) and for oligofructose (dietary fiber) in a 1:1 ratio with calcium. The results showed that the cape gooseberry pulp fortified with CMC, oligofructose, calcium and vitamin C, presented an average stability of 87,7±10,0; a viscosity of 22,8±7,9; a aw of 0,9863±0; pH 3,3±0,1; acid 1,6±0,1, grades brix was 13,3±0,7, a density of 1,32±0,0 g/mL and the best sensory responses regarding color, aroma, and flavor flow.

RESUMO: Cabo de celulose gooseberry fortificados com cálcio, vitamina C e oligofrutose é um alimento funcional, com grandes benefícios à saúde. Para isso foi adicionado componentes biologicamente ativos, tais como minerais, vitaminas, ácidos gordos, fibras e antioxidantes. Neste trabalho, a estabilidade da polpa rica em várias formulações, tendo em conta os critérios para a incorporação de cálcio e vitamina C (20% do valor diário recomendado VDR) e oligofrutose (fibra dietética) na proporção de 1:1 com cálcio. Os resultados mostraram que a polpa de groselha capa fortificado de acordo com a formulação F2 tinha uma estabilidade média de 87,7 ± 10, com uma viscosidade de 22,8 ± 7,9; 0,9863±0,0 aw; pH 3,3±0,1, o ácido 1,6 ± 0,1; brix foi de 13,3±0,7, uma densidade de 1,32±0,0 g/mL eo melhor em termos de respostas sensoriais cor, aroma e sabor do fluxo.
