Virgin olive oil rich in oleic fatty acid has a beneficial effect on health, especially on the cardiovascular system, blood cholesterol levels and the digestive system. The aim of this paper was to examine the possibilities of applying nutrition and health claims to virgin olive oil from the Istarska bjelica and Rosulja varieties. The fatty acid composition was determined by gas chromatography according to the HR EN ISO 12966-2:2017 method. The results showed that both varieties contain a high proportion of oleic fatty acid, with Istarska bjelica containing 77.3% and Rosulja 74.6%. Virgin olive oil from both varieties meets the conditions for the nutrition claims “High in unsaturated fat” and “High in monounsaturated fat”, as well as the health claim concerning the contribution of oleic acid to the maintenance of normal blood cholesterol levels.
