Abstract

Balanced diet is a combination of food of plant and animal origin according to age, labor features, and physical condition. When we eat meat, fat, eggs, bread, cheese, the body accumulates non-organic acid compound matter. Vegetables neutralize them due to alkali components. In this connection there is demand for green beans production in a shorter period in comparison to open ground sowing. Sprouting is a solution. The article outputs analytic data on green beans sprouting for sooner production. Besides there is a data on cluster analysis of green beans’ varieties grown from sprouts according to economic features, found out sources for their use in line production. Green beans’ sprout growing system in southern forest-steppe of Western Siberia will supply the region with early vegetables with the yield rate from 4 to 10 tons per ha for a longer period of green beans consumption.
