Abstract The results of experimental studies of the effect of electroplasmolysis on the process of extracting juice from quince are presented. It has been established that the preliminary processing of raw materials by electroplasmolysis can significantly increase the yield of juice from quince. Аннотация Представлены результаты экспериментальных исследований влияния электроплазмолиза на процесс извлечения сока из айвы. Установлено, что предварительная обработка сырья электроплазмолизом, позволяют существенно увеличить выход сока из айвы.
