Rancang Bangun Mesin Pengiris Tempe Otomatis Dengan Pengaturan Ketebalan

Abstract

Tempe merupakan makanan tradisional Indonesia yang dapat diolah menjadi aneka produk pangan, diantaranya adalah keripik dan mendoan. Banyak UMKM yang mengembangkan produk keripik tempe namun proses pengirisan tempe masih dilakukan secara manual. Proses manual memiliki kelemahan yaitu waktu yang lama, membutuhkan operator, dan hasil yang tidak konsisten. Pada penelitian ini dikembangkan sebuah mesin pengiris tempe otomatis. Mesin yang dikembangkan menggunakan sistem kontrol sehingga dapat mengatur ketebalan irisan dengan cara mengatur kecepatan putar motor pendorong. Rancangan sistem mekanik pendorong tempe dan hopper menyebabkan proses dapat berlangsung secara terus menerus. Pengujian untuk menentukan kinerja mesin dalam menghasilkan irisan tempe, dan untuk menentukan kapasitas mesin telah dilakukan. Hasil pengujian menunjukan bahwa mesin dapat mengiris tempe dengan baik mulai dari ketebalan 2 mm. Hasil pengujian juga menunjukan bahwa deviasi ketebalan hasil irisan tidak siknifikan, yaitu antara -2,2% s.d 2,5%. Kapasitas mesin tergantung dari tebal irisan. Untuk hasil irisan 3 mm kapasitas mesin adalah 22 29 kg/jam. Sedangkan kapasitas mesin untuk tebal irisan 5 mm dan 7 mm adalah 31, 85 kg/jam dan 38,96 kg/jam..
