Abstract

Viðfangefni þessarar skýrslu er umfjöllun um sóun í viðiskeðju grænmetis og leiðir til að draga úr henni. Vinnan var hluti af verkefninu Aukin gæði, geymsluþol og minni sóun í virðiskeðju íslensks grænmetis en verkefnið var styrkt af Matvælasjóði árið 2021. Viðfangsefnin voru eftirfarandi: (1) Tekið var saman yfirlit um fyrirliggjandi þekkingu á matarsóun á Íslandi. (2) Athuganir voru gerðar á aðfanga-keðjum og völdum verslunum. Hitastig var mælt í kælum verslana og síritar voru notaðir til að skrá hita við flutninga grænmetis. Viðkomandi aðilar hafa fengið ábendingar og haft möguleika á lagfæringum. (3) Gerð var könnun á viðhorfum til sóunar grænmetis hjá aðilum sem standa utan reksturs í virðiskeðju grænmetis. Upplýsingar allra aðila voru teknar saman og bent á lausnir og nýsköpunarmöguleika. (4) Gerð var prófun á vinnslu ósöluhæfs grænmetis og bent á ýmsar leiðir fyrir slíka nýtingu. _____ In this report the waste in the Icelandic vegetable value chain is discussed and possible solutions are suggested. The work was a part of a project on improved quality, shelf-life and reduced waste in the Icelandic value chain. The following aspects were studied: (1) State of knowledge regarding food waste in Iceland. (2) Examinations and temperature measurements under transportation of vegetables and in supermarkets. (3) Investigation of views towards waste of vegetables. (4) Possible product development using vegetables otherwise wasted.
