Encapsulados elaborados con mucílago de chía – alginato de sodio para aplicación en la industria alimentaria

Abstract

Se formaron encapsulados a partir de mezclas binarias de mucílago de chía y alginato de sodio, éste último en forma de solución acuosa de diferente concentración a partir de la técnica de gelificación iónica. Se realizó un análisis reológico para determinar el efecto de la composición en la viscosidad de las mezclas. Los resultados muestran que todas las mezclas tienen un comportamiento no newtoniano tipo pseudoplástico, además de que su índice de consistencia se incrementa al aumentar el contenido de alginato de sodio, lo que dificulta la formación de las cápsulas. Por otro lado, la presencia de mucílago de chía en una proporción del 25 o 50% en la mezcla con alginato de sodio al 3% facilita la formación de cápsulas moldeables, simétricas y estables. Las imágenes de la hidratación de las cápsulas indican un aumento regular de su volumen, lo que resulta favorable para el proceso de encapsulación.
