Abstract

O arroz é o grão mais consumido ao redor do mundo. Sua importância e consumo se dá principalmente em países subdesenvolvidos ou emergentes, tais como o Brasil [13]. Ainda, segundo Santos, Mendes e Lopes [13] o arroz branco polido é classificado: (formas de apresentação: em casca ou beneficiado), subgrupos (natural, parboilizado, integral, polido, parboilizado integral e parboilizado polido), classes (curto, médio, longo, longo fino e misturado) e tipos (de acordo com a quantidade de grãos defeituosos). Este é obtido através do polimento do grão integral, cujo processamento ocorre através da retirada da casca, do aleurona e do germe, resultando apenas o endosperma. Assim, com a retirada da maior parte do óleo e das enzimas do grão, permite uma maior vida de prateleira para o produto [1]. Este trabalho teve como objetivo classificar o arroz branco polido, através de análises rotineiras do laboratório de grãos da empresa Puro Grão unidade matriz e filial, em Pelotas. As análises de classificação do arroz branco polido e do canjicão são muito importantes no beneficiamento devido a necessidade de se buscar a qualidade exigida pelas legislações. Atualmente, inúmeras empresas possuem alto padrão de qualidade no que diz respeito ao beneficiamento do arroz branco polido. Mas muitas empresas não conseguem atingir tal nível de excelência no processamentode acordo com as legislações.
