
Introducción La palabra kéfir procede del turco keif o keyif, ese término se usaba para describir la “agradable sensación” o el “sentirse bien” que uno experimenta después de consumirlo (MK et al., 2026). En la etimología se vincula al placer o bienestar asociado a beber este fermentado; por eso algunos textos en inglés aclaran que su nombre deriva de la palabra turca que significa “sentirse bien después de comer” (Justel et al., 2025). El kéfir de leche es una bebida acidificada, cremosa, viscosa y ligeramente burbujeante que se origina cuando un consorcio de microorganismos, bacterias ácido lácticas, bacterias acéticas y levaduras que transforma la leche en una bebida viva y nutritiva (Bazán et al., 2024). Más allá de su sabor ácido y cremoso, el kéfir es un ejemplo natural de biotecnología: durante la fermentación, sus habitantes cooperan para producir compuestos beneficiosos que mejoran la digestibilidad de la leche y aportan nuevas propiedades (Ströher et al., 2025).
