Educación en inocuidad alimentaria: una estrategia para reducir las enfermedades transmitidas por alimentos

Abstract

Las Enfermedades Transmitidas por Alimentos (ETA) representan un problema de salud pública global. En América Latina, la falta de educación en inocuidad alimentaria y prácticas higiénicas deficientes agravan este problema. En Ecuador, el 15% de las enfermedades gastrointestinales están asociadas al consumo de alimentos contaminados. En el Instituto Superior Tecnológico Juan Bautista Aguirre (ITSJBA), la ausencia de programas educativos formales sobre higiene alimentaria ha aumentado el riesgo de brotes de enfermedades entre los estudiantes. Este estudio, de enfoque mixto, identificó prácticas de higiene alimentaria deficientes entre los estudiantes del ITSJBA, como la descongelación inadecuada (78.73% sumerge alimentos en agua) y la falta de separación de alimentos crudos y cocidos (25.71%). Además, el 46.35% reportó síntomas de ETA en los últimos seis meses, vinculados principalmente al consumo en la cafetería institucional. Para abordar estas deficiencias, se diseñó y socializó un manual educativo sobre manipulación higiénica de alimentos, difundido a través de redes sociales institucionales. Los resultados destacan la necesidad de fortalecer la educación en inocuidad alimentaria, especialmente en métodos seguros de descongelación, almacenamiento y lavado de manos. La implementación de este manual contribuye a reducir el riesgo de ETA y promueve una cultura de seguridad alimentaria, alineándose con los Objetivos de Desarrollo Sostenible
