Abstract

Ekstrak rosella (Hibiscus sabdariffa L.) merupakan sumber antosianin yang berperan sebagai pewarna dan antioksidan alami. Penelitian ini bertujuan mengevaluasi pengaruh iradiasi gamma terhadap stabilitas warna dan absorbansi ekstrak rosella. Sampel diperoleh melalui maserasi bunga rosella kering dalam etanol 70%, kemudian diiradiasi dengan Co-60 pada dosis 0–9 kGy. Absorbansi diukur menggunakan spektrofotometer UV-Vis pada panjang gelombang 530 nm, dan perubahan warna diamati secara visual. Hasil menunjukkan adanya penurunan absorbansi signifikan dari 2,57 menjadi 0,29, serta pemudaran warna seiring peningkatan dosis. Penurunan signifikan terjadi pada rentang 0–2 kGy, yang mengindikasikan degradasi antosianin akibat paparan radikal bebas dari radiolisis air. Dengan demikian, ekstrak rosella kurang stabil terhadap iradiasi pengion dan penggunaannya sebaiknya disesuaikan dengan kebutuhan aplikasi. Ekstrak ini lebih cocok digunakan pada sistem indikator berbasis perubahan warna, namun kurang direkomendasikan untuk produk konsumsi yang membutuhkan stabilitas warna dan bioaktivitas pasca sterilisasi.

Roselle (Hibiscus sabdariffa L.) extract is a natural source of anthocyanins, which serve as natural colorants and antioxidants. This study aims to evaluate the effect of gamma irradiation on the color stability and absorbance of roselle extract. The samples were prepared by macerating dried roselle petals in 70% ethanol, then irradiated using Co-60 at doses ranging from 0 to 9 kGy. Absorbance was measured using a UV-Vis spectrophotometer at 530 nm, and color changes were observed visually. The results showed a significant decrease in absorbance, from 2.57 to 0.29, along with noticeable color fading as the radiation dose increased. A sharp decline was observed between 0 and 2 kGy, indicating anthocyanin degradation due to free radicals generated from water radiolysis. These findings demonstrate that roselle extract has low stability against ionizing radiation, and its application should be adjusted based on intended use. The extract is suitable for color-changing indicator systems but is less recommended for consumption products requiring post irradiation stability in color and bioactivity.
