Abstract

El reto de brindar un servicio al cliente rápido y eficiente es un factor crucial para la calidad y la satisfacción en los snack bars. Este estudio de caso se centra en la eficiencia de las colas en la cafetería de un hospital de la Zona Este de la ciudad de São Paulo, Brasil. Si bien existen varios estudios sobre la eficiencia en el servicio, pocos abordan la integración de tecnologías para optimizar las colas. Este trabajo tiene como objetivo comprender la eficiencia de las colas y la satisfacción del cliente en un entorno hospitalario específico, a través de análisis realizados en el software Arena. Los datos se recogieron a través de una entrevista con el gerente de la cafetería e información local. Los resultados muestran una notable eficiencia en el uso de los recursos y en el movimiento de los clientes. La mayoría de las colas tienen tiempos de espera cercanos a cero, a excepción de la preparación y retirada de la merienda. Aunque la utilización de la placa es alta, lo que indica un posible cuello de botella, el sistema en su conjunto tiene buenos indicadores de eficiencia. Se concluye que el establecimiento tiene un funcionamiento eficiente de las colas y que existe un equilibrio en el uso de los recursos.

O desafio de fornecer atendimento rápido e eficiente ao cliente é um fator crucial para a qualidade e satisfação em lanchonetes. Este estudo de caso foca na eficiência das filas em uma lanchonete hospitalar na Zona Leste da cidade de São Paulo, Brasil. Enquanto existem diversas pesquisas sobre eficiência em atendimento, poucas abordam a integração de tecnologias para otimização das filas. Este trabalho tem como objetivo compreender a eficiência das filas e a satisfação dos clientes em um ambiente hospitalar específico, através de análises realizadas no software Arena. Coletamos dados via entrevista com a gerente da lanchonete e informações locais. Os resultados mostram eficiência notável na utilização de recursos e na movimentação dos clientes. A maioria das filas tem tempo de espera próximo de zero, exceto na etapa de preparo e retirada do lanche. Embora a utilização do chapeiro seja alta, indicando um possível gargalo, o sistema como um todo apresenta bons indicadores de eficiência. Conclui-se que o estabelecimento tem uma operação eficiente de filas e que há um equilíbrio na utilização dos recursos.

The challenge of providing fast and efficient customer service is a critical factor for quality and satisfaction in cafeterias. This case study focuses on the queue efficiency at a hospital cafeteria in the East Zone of São Paulo city, Brazil. While there are various studies on service efficiency, few explore the integration of mobile technologies for queue optimization. This work aims to understand queue efficiency and customer satisfaction in a specific hospital setting, using analysis conducted through Arena software. Data were collected through an interview with the cafeteria manager and local information. The results show remarkable efficiency in resource utilization and customer flow. Most queues have near-zero wait times, except in the preparation and retrieval of snacks. Although the grill chef's utilization is high, indicating a potential bottleneck, the system as a whole shows good efficiency indicators. It is concluded that the establishment has efficient queue operation and that there is a balance in resource utilization, with some points for specific improvement.
