Hasil ekstraksi Betasianin pada kulit buah naga menggunakan metoda maserasi dengan pelarut alkohol selama 3 hari kemudian dipekatkan dengan rotavapor pada suhu 60°C. Ekstrak di karakterisasi menggunakan metoda HPLC dengan fasa gerak larutan trifluoroasetat dalam asetonitril pada mode isokratik, kolom LichroCart Purospher Star RP-18, panjang gelombang 537 nm, jumlah sampel 10 µL dengan waktu 25 menit dan laju alir 1,0 mL/menit. Didapatkan puncak pada 11,5 menit yang sama dengan standar betasianin yang digunakan. Ekstrak kulit buah naga digunakan dalam pembuatan kerupuk merah, ternyata ekstrak tidak dapat bertahan dari panas karena teroksidasi menyebabkan hilangnya warna merah pada kerupuk yang sudah jadi.
