Secado de Granos de Cacao en un Secador Solar Inflable

Abstract

En este trabajo se procesó granos de cacao (Theobroma cacao L.) en un secador solar inflable (ISD). Trabajando el ISD como secador directo y activo, se redujo en cinco días el contenido de humedad de 84.6 kg de cacao recién fermentado de 50 a 7.4 %, con 25.5 horas acumuladas de exposición solar. A su paso por el secador, el aire desecante incrementó su temperatura entre 2 y 20 °C y redujo su humedad relativa entre 20 y 30 puntos porcentuales, con respecto a sus valores de entrada. La temperatura del grano siempre estuvo por debajo del límite máximo permitido (i.e., 65 °C). Por su parte, la eficiencia energética promedio del secador disminuyó conforme se reducía la humedad del grano al avanzar los días: de 72.6%, el primer día, a 8.5%, el quinto día. La evaluación físico-sensorial indica que el cacao obtenido tiene calidad aceptable para elaborar chocolate. Adicionalmente, este tipo de secador puede ser aprovechado para otros productos agrícolas.
