Efecto del glicerol como plastificante en películas de almidón de maíz modificado

Abstract

En esta investigación se determina el efecto del glicerol como plastificante en la obtención de películas biodegradables a base de almidón de maíz comercial modificado por acetilación. Los almidones se modificaron con tiempos de reacción entre 30 y 60 minutos, manteniendo constante el volumen del Anhídrido Acético como agente modificante y la temperatura de reacción; se evidenció que la modificación afectó significativamente la composición en carbohidratos, cenizas, humedad y fibras (p0,05). En las propiedades funcionales se observaron diferencias significativas (p<0,05) entre los almidones. Se verificó, mediante análisis termogravimétrico, que el almidón nativo tiene mayor pérdida de peso en comparación con los almidones acetilados con tiempo de reacción diferentes. El almidón con alto grado de sustitución (GS= 0,021) se empleó en la elaboración de películas, a través del método Casting, para ello se empleó un diseño experimental de tipo factorial 23, con concentraciones de almidón modificado de 2%, 4% y 6 % p/v y glicerol en concentraciones de 1%, 3% y 5 % p/v. Los resultados de las variables de respuesta (% Solubilidad y % Humedad), se interpretan a través del análisis estadístico ANOVA, pudiendo observar en el diagrama de Pareto y el gráfico de Superficie de respuesta, que, a mayor porcentaje de glicerol, las películas experimentan un incremento en la interacción con el almidón de maíz modificado (p<0.05); caso contrario con la concentración de almidón de maíz modificado (p<0.05). El modelo de regresión determinado para, %Humedad y %Solubilidad arrojan un R2 ajustado de 97,1201 %, y 95,7232 %, respectivamente, por lo que cumplen con las condiciones necesarias para garantizar la obtención óptima del producto.
