
Some illustrations are given of how historical factors, such as the pattern of domestication of animals, and plants, and religious traditions, work together to form cultural determinants of diet. It is suggested that some long-term genetic changes in human populations may have come about as a result of consumption of particular foods, as for example, animal milk after weaning.
