Capacidad antioxidante y antimicrobiana de vinagres Comerciales

Abstract

En este trabajo se ha estudiado la capacidad antioxidante y antimicrobiana de distintos vinagres comerciales. Los parámetros controlados han sido los polifenoles totales, el perfil polifenólico, la capacidad antioxidante y la capacidad antimicrobiana. Los resultados obtenidos muestran que la capacidad antioxidante de los vinagres varia en función del tipo de vinagre e incluso dentro de una misma tipología de vinagre los valores varían evidenciando la importancia de la materia prima en su elaboración. No se ha encontrado una buena correlación entre la capacidad antioxidante y los polifenoles totales, no obstante los flavonoles parecen tener una influencia notable sobre la capacidad antioxidante. El principal responsable de la inhibición microbiana de los vinagres se debe al ácido acético, no obstante, algunos de los vinagres, presentan una capacidad antimicrobiana ligeramente superior a la que produce la mezcla de ácido acético yagua de igual graduación acética. Microorganismos resistentes a la acidez presentan inhibición débil frente al ácido acético y los vinagres ensayados. Contrariamente, microorganismos sensibles a la acidez presentan inhibición proporcional a la graduación acética, y los resultados parecen confirmar que, para una misma graduación acética los vinagres con mayor concentración de polifenoles totales actúan más eficazmente en la inhibición.
