Abstract

Este Trabajo de Final de Grado es un proyecto de diseño de una planta de procesado de suero de leche, concretamente para la obtención de un producto deshidratado con alto contenido de proteína. Se ha estudiado la problemática ambiental implicada en las queserías y los volúmenes de producción de suero en Catalunya, así como la legislación implicada en la gestión de este derivado lácteo. Una vez obtenidas las producciones, se identifica la tecnología más adecuada para obtener la línea de procesado idónea para el producto final deseado. Obtenidos los volúmenes a procesar y la maquinaria implicada, se realizan los cálculos necesarios para dimensionar las instalaciones de iluminación, eléctrica, frigorífica y contra incendios. Finalmente se elaboran los planos para poder hacer efectivo los cálculos de las instalaciones. Así pues el documento consta de memoria, 8 anejos y 10 planos.

Aquest Treball de Final de Grau és un projecte de disseny d'una planta de processat de sèrum de llet, concretament per l'obtenció d'un producte deshidratat amb alt contingut de proteïna. S'ha estudiat la problemàtica ambiental implicada en la gestió d'aquest derivat làctic. Un cop obtinguts les produccions, s'identifica la tecnologia més adequada per obtenir la línia de processat idònia pel producte final desitjat. Obtinguts els volums a processar i la maquinària implicada, es realitza els càlculs necessaris per dimensionar les instal·lacions d'il·luminació, elèctrica, frigorífica i contra incendis. Finalment s'elaboren els Plànols per poder fer efectius els càlculs de les instal·lacions. Així doncs el document consta de memòria, 8 annexos i 10 Plànols.

This work Final Grade is a project of designing a processing plant whey, specifically for obtaining a dehydrated product with high protein content. We have studied the environmental issues involved in the cheese factories and production of volumes serum in Catalonia, and the legislation for the management. Once obtained productions, the most appropriate technology for the processing line suitable for the desired end product is identified. Obtained volumes to process and machinery involved, the necessary calculations are performed to gauge lighting installations, electrical, refrigeration and fire. Finally the plans to implement facilities calculations are made. Thus the document consists of memory, 8 attached spreadsheets and 10 drawings.
