Abstract

Tradicionalment, per la preservació dels aliments peribles s’addicionen, en el propi aliment, antioxidants que poden ser naturals o bé sintètics, essent aquests últims els més utilitzats en l’actualitat. En els darrers anys, s’ha posat en dubte la innocuïtat d’aquests antioxidants sintètics, degut a que estudis recents han mostrat que alguns d’aquests antioxidants consumits prolongadament i amb elevades dosis, poden ser mutagènics i/o cancerígens en animals d’experimentació. És per això que la tendència en el sector alimentari de productes peribles és disminuir la utilització d’aquests antioxidants presents en l’aliment i que sigui el propi embolcall el que el protegeixi dels agents externs que provoquen la seva degradació. Un anàlisis del cicle de vida realitzat per l’Institut IFEU d’Alemanya, i en el que es comparen els impactes ambientals de les principals solucions d’envasat per aliments de llarga durada, mostra que l’envàs de cartró és el sistema que te major rendiment ambiental en termes de consum de recursos fòssils i de reducció d’emissions de CO2, en comparació a les llaunes de metall, els pots de vidre i als recipients de plàstic. Però el cartró, de per si, no posseeix propietats antioxidants, per tant requereix d’una modificació per tal de poder ser utilitzant en l’embalatge de productes peribles. Així doncs l’objectiu d’aquest projecte és modificar superficialment i biotecnològicament, suports cel·lulòsics per tal de conferir-los la propietat antioxidant. La novetat del projecte radica en que s’utilitzarà un material natural, biodegradable, renovable i reciclable, com és la cel·lulosa, i que aquesta serà funcionalitzada mitjançant tècniques biotecnològiques, donant lloc a un nou bio-material.

Els suports cel·lulòsics que s’utilitzaran seran de tipus comercial i/o fulls de laboratori fabricats a partir de diferents fibres naturals. Per conferir la propietat antioxidant s’utilitzaran compostos fenòlics que posseeixin activitat antioxidant. Pel tractament enzimàtic s’utilitzaran diferents enzims oxidatius, tipus lacasa i/o peroxidasa. S’estudiaran les condicions del tractament enzimàtic que donin lloc als millors resultats en termes d’activitat antioxidant. Una variable important a tenir en compte serà el temps de reacció. Per la caracterització de les mostres funcionalitzades s’avaluarà la capacitat antioxidant mitjançant les tècniques basades en la quantificació de la decoloració del radical ABTS i/o la decoloració d’una dissolució de DPPH. Si es considera oportú i depenent del compost fenòlic optimitzat, també s’avaluarà d’altres propietats interessants pels embolcalls com ara la hidrofobicitat i/o propietats barrera.
