Abstract

El objetivo es preparar películas biodegradables de PAAG-12 con la incorporación de un antioxidante, la vitamina E, caracterizarlos y evaluar su actividad antioxidante. Se partió de trabajos previos para hacer la síntesis de PAAG-12. Se prepararon películas de este polímero y de PLA sin aditivo y también se les añadió un 5% de α-tocoferol y ácido gálico en concentraciones variables. Se caracterizaron por DSC, FTIR y TGA.Las películas se aplicaron a tres food models diferentes para evaluar su capacidad protectora frente a la oxidación. Se usaron simulantes alimentarios y se realizaron ensayos ORAC sobre los extractos de las películas de PLA, así como análisis HPLC y ORAC de los extractos en contacto con las películas de PAAG-12. El segundo food model utilizado consistía en emulsiones (O / W) a base de aceite de girasol. La oxidación primaria se midió con el valor de peróxido, mientras que la secundaria (mediante TBARs) se observó con en el tercer food model, un modelo cárnico sin cocción. Los resultados demostraron que tanto el α-tocoferol como el ácido gálico mejoraban la estabilidad térmica de las películas preparadas. Asimismo, la inclusión de estos antioxidantes actuaba como agente nucleante favoreciendo la cristalización del PLA semicristalino, lo que no se observó en las películas de PAAG-12. A pesar que los espectros de FTIR no mostraban presencia de antioxidantes en las películas, su capacidad antioxidante pudo ser demostrada gracias a los ensayos de Folin-Ciocalteu, HPLC y ORAC, así como con la determinación del valor de peróxido para medir la oxidación primaria de las emulsiones O/W.
