Abstract

En els darrers anys ha augmentat l’interès pels antioxidants, passant a ser considerats com un sinònim de salut. A més, s’han incrementat els estudis per trobar fonts d’antioxidants naturals per poder substituir els sintètics. El projecte presentat a continuació és un estudi de l’activitat antioxidant de quatre fruits rojos: el gerd, el nabiu, el saüc i el roser silvestre. S’han dut a terme diferents assajos per estudiar la capacitat antioxidant d’aquests fruits. S’han determinat els polifenols totals mitjançant el mètode Folin Ciocalteu, l’activitat antiradicalària mitjançant els mètodes ORAC, TEAC i DPPH i també el contingut de antocianines. També s’ha estudiat la seva capacitat anticancerígena en cèl·lules de càncer de fetge. A més, s’ha estudiat l’aplicació dels extractes de cadascun dels fruits rojos en dos sistemes models: emulsions i hamburgueses de carn de vedella. Dels resultats obtinguts destaca el saüc pel seu alt contingut en polifenols totals (99,5570 mM GAE/g de mostra seca) i antocianines (72,3209 equivalents de malvidin-3-glucósid/g de mostra seca) i també és important l'activitat protectora del gerd a les hamburgueses de vedella, la qual arriba a nivells de protecció similars als del conservant sintètic. És important l’impacte que poden arribar a tenir les investigacions d’aquest tipus a la indústria alimentària ja que, com es pot veure en aquest projecte, els fruits rojos contenen antioxidants naturals que poden protegir de l’oxidació de directament, afegint-los a la carn i també a través d'envasos actius elaborats amb els seus extractes.
