Detección y eliminación de fumonisinas en alimentos

Abstract

La realización de este proyecto plantea la posibilidad de ofrecer una alternativa eficaz y sostenible para la detoxificación de fumonisinas en alimentos. El paso previo a la aplicación del método de detoxificación ha sido la detección de fumonisina, proceso para el cual se ha puesto en marcha el ensayo por inmunoadsorción ligado a enzimas, más conocido como método ELISA. Para llevar a cabo el proceso de detoxificación hemos evaluado el uso de perlas de alginato de calcio como adsorbente en sustitución de las arcillas que son los adsorbentes más utilizados en la actualidad con este fin dentro de la alimentación animal (piensos). Los motivos que existen para la detoxificación de fumonisinas son debidos tanto a sus efectos negativos sobre la salud animal y humana, como a sus efectos devastadores sobre los cultivos, destacando su gran afectación a los cereales.
