Abstract

Las reacciones adversas a los alimentos son hoy en día temas de máxima actualidad en el campo de la nutrición y alimentación. Entre ellas destacan, por suprevalencia y relevancia clínica, la intolerancia a la lactosa (IL) y diversos trastornos relacionados con el gluten, como la enfermedad celíaca (EC). En los últimos años se han producido importantes avances en el conocimiento científico de ambos trastornos, al mismo tiempo que se publicaban nuevas regulaciones y normativas para los alimentos aptos para las personas que padecen alguno de ellos con el fin de mejorar la protección de las mismas. Paralelamente la industria alimentaria ha diseñado una gran variedad de productos sin gluten y sin lactosa que han experimentado un crecimiento considerable en los últimos tiempos...
