Abstract

Целта на дисертационният труд е прилагане на методите на фотониката като качествени и полуколичествени средства за изследване на връзките между оптичните свойства и антиоксидантния ефект на екстракти и сокове от лечебни растения във връзка с използването им при производсвото на хранителни добавки, фармацевтични или козметични продукти.Адаптирана и приложена е методика за регистриране на флуоресцентни спектри за качествено и полуколичествено определяне на съединения с антиоксидантен ефект в екстракти от лечебни растения.С цел откриване на корелации между параметрите на приложната фотоника и веществата, допринасящи за антиоксидантната активност са получени резултати за общото съдържание на антоцианини, полифенолни съединения и антиоксидантната активност.Доказано е, че интензитетът на флуоресцентните емисионни максимуми на сокове от плодове на червени боровинки, малини и дренки корелират с тяхната антиоксидантна активност, определена по различни методи.За първи път са изследвани оптичните свойства на натурален дървесен сироп, богат на фенолни компоненти. Флуоресцентните спектри могат да се използват за качествено определяне на пигменти и някои витамини, а концентрацията на фенолните съединения корелира добре с цвета на сиропа.Приложната фотоника може да бъде използвана за качествено определяне на мастно-киселинния състав, пигменти, съдържание на хлорофил и първичните и вторични продукти на окисление в хода на съхранение и обработка на маслата.

The aim of the dissertation is to apply the methods of photonics as qualitative and semi-quantitative tools for studying the relationship between optical properties and antioxidant effect of extracts and juices of medicinal plants in connection with their use in the manufacture of food supplements, pharmaceuticals or cosmetics.A method for recording fluorescence spectra for qualitative and semi-quantitative determination of compounds with antioxidant effect in extracts of medicinal plants has been adapted and applied.In order to detect correlations between the parameters of applied photonics and the substances contributing to the antioxidant activity, results were obtained for the total content of anthocyanins, polyphenolic compounds and antioxidant activity.It has been proven that the intensity of the fluorescent emission maxima of lingonberry, cornel and raspberry fruit juices correlates with their antioxidant activity, determined by different methods.For the first time, the optical properties of a natural wood syrup rich in phenolic components were studied. Fluorescent spectra can be used for qualitative determination of pigments and some vitamins, and the concentration of phenolic compounds correlates well with the color of the syrup.Applied photonics can be used for qualitative determination of fatty acid composition, pigments, chlorophyll content and primary and secondary oxidation products during storage and processing of oils.
