Extracción de bromelina a partir de residuos de piña

Abstract

In the present work the determination of protein concentration and enzymatic activity of bromelain were tested in each one of the parts of pineapple: crown, shell, heart and pulp. The bromelain was obtained by precipitation with ethanolic extraction at -10 ºC. The results shown that the best protein concentration was obtained in shell at 7 days (857.35 mg/mL) being higher than pulp and heart with values of 625.09 mg/mL and 591.04 mg/mL respectively. The specific activity was 19.88 nmol/min/mg in heart, very similar to pulp (18.73 nmol/ min/mg) and both were bigger than the activity in shell (9.05 nmol/min/mg). However the crown, the shell and the heart are considered like agro industrial waste and these could be used in extraction and purification to get bromelain with low cost.

En este trabajo de investigación se reporta la concentra- ción de proteínas, actividad enzimática y proteolítica de la bromelina extraída por precipitación alcohólica a -10 ºC de diferentes partes de este fruto, nuestros resultados muestran que a los 7 días se tuvo una concentración de proteínas en cáscara de 857,35 mg/mL mayor a las en- contradas en pulpa y corazón (625,09 mg/mL y 591,04 mg/ mL, respectivamente). La actividad específica en corazón fue de 19,88 nmol/min/mg, similar al de pulpa (18,73 nmol/ min/mg) y mayor al presente en cáscara (9,05 nmol/min/mg), sin embargo, esta última al ser un residuo agroindustrial puede ser potencialmente utilizado en la extracción y purifi- cación de esta enzima a un menor costo.
