
La microbiota de un producto pesquero incluye la identificación de las especies bacterianas de interés para la salud pública durante el cultivo, cosecha y transportación. El presente trabajo determinó la calidad bacteriológica de Oreochromis spp. (tilapia roja), de cultivo intensivo en jaulas flotantes de ambientes dulceacuícolas. El estudio se efectuó en la presa “La Cidra”, al Norte de Matanzas en período de seca y de lluvia. Se realizaron cuatro muestreos de 60 muestras que se conservaron en nevera con hielo durante 3 h hasta su análisis. Se determinó el recuento total de microorganismos a 30 °C, el número de coliformes fecales y Escherichia coli; la presencia de Listeria monocytogenes, Salmonella spp., Streptococcus sp., Pseudomonas spp., Aeromonas spp., Vibrio cholerae y V. parahaemolyticus. Los microorganismos se aislaron de piel, branquias, intestino y músculo. La carga microbiana en músculo fue menor que en el resto de los órganos analizados. En el período de lluvia el crecimiento microbiano en órganos fue mayor que en período de seca. Los géneros bacterianos de interés sanitario identificados, fueron: Aeromonas, Pseudomonas, Micrococcus y la familia Enterobacteriaceae y las especies identificadas fueron: Aeromonas hydrophila, A. sobria, Pseudomonas aeruginosa, P. cepacia, Vibrio (Listonella) damsella, V. hollisae, V. mimicus, algunas cepas del grupo coliformes y Escherichia coli.
The microbial of fisheries products including the identification of bacterial species of interest to public health during cultivation, harvesting and transportation. This study determined the bacteriological quality of Oreochromis spp. (Red tilapia), intensive farming in floating cages in freshwater environments. The study was conducted in the dam “La Cidra”, north of Matanzas in dry and rain seasons. 60 samples were stored in a refrigerator with ice for 3 h until analysis. We determined the total colony count at 30 °C, the number of fecal coliforms and Escherichia coli, Listeria monocytogenes, Salmonella spp., Streptococcus spp., Pseudomonas spp., Aeromonas spp., Vibrio cholerae and V. parahaemolyticus. The organisms were isolated from the tilapia skin, gills, intestine and muscle. The microbial load in muscle was lower than in the other organs analyzed. In the rainy season microbial growth in organs was higher than in dry period. The bacterial genera identified for public health interest were: Aeromonas, Pseudomonas, Micrococcus and Enterobacteriaceae and the species identified were: Aeromonas hydrophila, A. sobria, Pseudomonas aeruginosa, P. cepacia, Vibrio (Listonella) damsella, V. hollisae, V. mimicus, and some strains of Escherichia coli and coliform group.
