Applications of high hydrostatic pressure in the food industry

Abstract

Isıl işlem teknikleri, gıda maddelerinin mikrobiyolojik ve biyokimyasal değişimlerden korunması ve raf ömrünün uzatılması amacıyla günümüzde yaygın olarak kullanılmaktadır. Isıl işlem teknikleri, mikroorganizmaların hem vejetatif hem de spor formlarının tamamını yok edebildiği için, uygulandıkları gıdanın mikrobiyolojik olarak güvenilir bir gıda olmasını sağlamaktadır. Bununla birlikte, ısıl işlem uygulamalarının, kullanılan sıcaklık seviyesine bağlı olarak, gıda maddesinin beslenme değerinde ve duyusal kalite özelliklerinde azalmaya ve toksik bileşenlerin oluşmasına neden olduğu bilinmektedir. Beslenme değerinde ve duyusal özelliklerinde en az kayıpla üretilen, daha taze gıda ürünlerine artan müşteri talebinin karşılanması ve kabul edilebilir bir raf ömrü elde edilebilmesi için yapılan çalışmalar, son on yıllık dönemde, özellikle ısıl işlem içermeyen (non-thermal) inaktivasyon teknikleri üzerine yoğunlaşmıştır. Bu makalede, ısıl işlem içermeyen tekniklerden birisi olan yüksek hidrostatik basınç tekniğinin gıdalar için uygulamaları ve etkileri ayrıntılı olarak irdelenmiştir.

Nowadays, thermal processes are used in order to preserve food from microbiologic and enzymatic changes and extend the shelf life. Thermal treatments are particularly safe, assures a total inactivation of vegetative microorganism cells and spore. On the other hand it present some disadvantages related to the high temperature employed, such as denaturation of proteins, vitamins, productions of toxic compound, undesirable organoleptic features. The last decade, non-thermal inactivation techniques have been a major research issue, driven by an increased consumer demand for nutritious, fresh like food products with a high organoleptical quality and an acceptable shelf life. Present article represents studies on application aspects and effects of high hydrostatic pressure in foods.
