Abstract

Ergosterol, which is an important constituent of fungal cell wall, has the potential to be used as an important quality index for the tomatoes processed to tomato paste. In this study; ergosterol and patulin contents of dried tomatoes, dried peppers and paprika paste, were determined and the relationships between these substances were investigated.In the first step of the research, pH, soluble solid content (brix), acidity, moisture (%), salt, ash, colour, ergosterol and patulin contents of commercial and home made paprika paste were determined and the relationships between ergosterol and patulin were investigated. At second step, moisture, ergosterol and patulin contents of commercial and home made dried tomatoes and dried peppers were determined, the relationships between ergosterol and patulin were investigated.pH, brix, moisture, titration acidity, salt, ash, ergosterol and patulin amounts of commercial and home made paprika paste showed significant differences (p<0,05). Patulin content was significantly correlated with the ergoserol content in commercial and home made sweet paprika paste as 0.90 and 0,96 respectively

Küflerin önemli bir hücresel bileşeni olan ergosterol salçaya işlenen domateslerin kalitesinin belirlenmesinde önemli bir kalite parametresi olarak kullanılmaktadır. Bu çalışmada, patulin ve ergosterolün kurutulmuş domates, kurutulmuş biber ve biber salçasında miktar tespitleri yapılarak, aralarındaki ilişki ortaya konulmuştur.Bu amaçla, araştırmanın ilk aşamasında, sanayi ve ev tipi biber salçalarının pH, brix, nem, titrasyon asitliği, tuz, kül, renk, ergosterol ve patulin miktarları belirlenmiş ve patulin ile ergosterol arasındaki ilişki ortaya konulmuştur. İkinci aşamada, sanayi ve ev tipi kurutulmuş domates ve kurutulmuş biber örneklerinde nem, patulin ve ergosterol tespiti yapılmış ve patulin ile ergosterol arasındaki ilişki ortaya konulmuştur.Sanayi ve ev tipi biber salçalarının pH, brix, nem, titrasyon asitliği, tuz, kül, renk, ergosterol ve patulin miktarları gerek sanayi gerekse ev tipi üretimler bakımından farklılık göstermiştir (p<0.05). Hem sanayi hem de ev tipi üretilen tatlı biber salçalarında patulin ile ergosterol arasında sırasıyla 0.90, 0.96 düzeyinde ilişki tespit edilmiştir.
