Abstract

ABSTRAKT Ülkemizde bira üretimi her yıl artmaktadır. Buna batlı olarak ihracatın arttırılması, tüketiciye kalitesi yüksek bira sunulması ile gerçekleştirilebilir. Bira üretiminde., laktik asit bakterileri kalite, bozukluklarına neden olan en önemli unsurlardır. Bu çalışmada bir bira fabrikasının üretim hattındaki kontaminasyon odakları ile mayanın farklı iki pH düzeyinde yıkanmasının <ph 2.5-3) laktik asit bakterilerine etkisi araştırılmıştır. Araştırmada DBA agar ve MSB broth bes-i ortamları olarak kullanılmıştır. Mayanın pH 2. 5 'da yıkanmasının pH 3.0 da yıkanmasından daha etkili olduğu saptanmıştır. Tanklarda cip sistemi daha etkin bir temizlik sağlamaktadır. ABSTRACT The beer production has been increasing every year in the Turkey. The increase at the export level of beer depends on the representing of high quality beer to Customers. The most important quality problem at beer production are caused by lactic acid bacteria. In this study bacteria contamination points at the beer production line and the effect of phosforic and treatment of yeast at two different pH level (2.5-3) about lactic acid bacteria were researched. UBA agar and NEB broth were as nutrient media for lactic acid bacteria. The pH level 2.5 was more effective than pH level 3.0 to treat yeast. The CIP system was more effective to carry out cleaning the tanks. Ill
