Turkey is the largest producers of hazelnuts (Corylus avellana L.). Hazelnut skin: is a by-product from the hazelnut processing. The objective of the present workwas to isolate and characterize the non-cellulosic components of hazelnut skin and evaluate the classical and ultrasound extractions with respect to the yield, chemical composition and antioxidant activity of the obtained polysaccharide fractions.
