Abstract

A produção de carne de búfalos é uma atividade que tem conquistado cada vez mais espaço na pecuária de corte brasileira, principalmente em função da sua boa adaptabilidade aos trópicos. A estimativa do rendimento da carcaça e dos cortes primários e comerciais, por ocasião do abate, é de suma importância para complementar a avaliação do desempenho do animal durante o seu desenvolvimento O objetivo do trabalho foi avaliar as características de carcaça de búfalos Murrah castrados terminados em confinamento. Foram utilizados 20 bubalinos, da raça Murrah, com 15 meses de idade com peso inicial de 207 kg, castrados e descornados, sendo estes animais divididos em quatro grupos homogêneos que foram abatidos aos 75, 100, 125, 150 dias de confinamento após o período de adaptação. Após os períodos de permanência pré-estabelecidas no confinamento, os animais foram abatidos em frigorífico comercial obedecendo o fluxo normal. Ao abate as carcaças foram identificadas, resfriadas por 24 horas e pesadas as meia-carcaças, dianteiro, ponta de agulha, traseiro total, especial e cortes do traseiro especial e foram calculados os seus respectivos rendimentos. Não houve diferença estatística para rendimento de carcaça. Os pesos de traseiro total, especial e dianteiro apresentaram efeito de aumento linear, porém para rendimento dos cortes primários foi observado efeito cúbico para traseiro total e dianteiro. Para peso dos cortes comerciais foi observado aumento linear para o filé mignon, contra filé, fraldinha, coxão mole, coxão duro, lagarto, sebo porção comestível e ossos. Para os rendimentos desses cortes houve efeito linear decrescente para patinho, músculo traseiro, maminha+alcatra e crescente para fraldinha e sebo.

The production of buffalo meat is an activity that has won more and more space in the Brazilian cattle raise, specially, because of its good adaptability to the tropics. The estimative of the carcass yield, primary and commercial cuts, per slaughter, is of great importance to complete the performance evaluation of the animal during its development. The purpose of this work was to evaluate the carcass traits of castrated Murrah buffaloes in feedlot. Twenty castrated, hornless Murrah buffaloes, with 15 months and initial weight 207 kg were used, these animals were separated in four groups that were slaughter in 75, 100, 125, 150 days of feedlot after the adaptation stage. After the determined days of feedlot, the animals were slaughtered in a commercial slaughterhouse submitting the normal flux. In the slaughter the carcasses were identified, cooled for 24 hours, and weighted the half carcass, hindquarter, spare ribs, forequarter, pistola style cut, and the yield was calculated. There was not statistics difference for the carcass yield. The weight of the pistola style cut, forequarter and hindquarter presented linear increase effect, however the yield of primary cuts were noticed cubic effect for forequarter and hindquarter. For commercial cut weight was showed linear increase, to full tenderloin, strip-loin, bottom sirloin, inside round, outside round, eye of round, tallow, retail beef cuts and bones, however to the yield of these cuts there were linear effect decrease to knucle, shank, top sirloin butt+bottom sirloin butt, and increase to bottom sirloin and tallow.
