Abstract

O presente trabalho teve como objetivo relacionar elementos qualitativos e quantitativos do pré-abate e abate de bovinos que pudessem caracterizar situação ou evolução desses, visando às boas práticas agropecuárias e as condições de bem-estar animal e suas possíveis consequências. Para isso foram monitorados os seguintes aspectos: lesões musculares visíveis nas carcaças quanto a sua localização e seu grau de severidade; atividade de enzimas séricas músculo específicas indicativas de lesão (CK, AST, LDH) e, finalmente, a evolução do pH post mortem das carcaças. Esses parâmetros foram avaliados em diferentes sistemas de terminação de bovinos (animais oriundos de pasto ou confinamento) e classes sexuais (machos ou fêmeas). Foi constatada ao menos uma contusão em 58,1% das carcaças, sendo 96,11% de grau I, sendo o grupo das fêmeas o mais afetado, com 81,3%. De maneira geral, as enzimas séricas mostraram-se elevadas quando comparadas aos valores de referência utilizados, principalmente CK e LDH. Os animais de pasto apresentaram valores de enzimas significativamente maiores que os de confinamento e as fêmeas maiores valores de CK comparadas aos machos. This study aimed to relate qualitative and quantitative elements of the preslaughter and slaughter of cattle that could characterize the situation and evolution of these in order to good farming practices and the conditions of animal welfare and its possible consequences. For this it was monitored the following: muscle injuries visible on the carcasses as its location and its severity; activity of specific serum enzymes indicative of muscle damage (CK, AST, LDH) and, finally, the evolution of post mortem pH of carcasses . These parameters were evaluated in different cattle feeding production systems (cattle from pasture or feedlot) and sex classes (male or female). It has been found at least one injury in 58.1% of the carcasses, and 96.11% grade I, being the group most affected females, with 81.3%. In general, the serum enzymes were high compared to the reference values are used, primarily CK and LDH. Animals from pasture showed significantly higher values of enzymes that feedlot and higher values of CK in females compared to males. The pH was found to be comparatively higher in grazing animals and in males
