Abstract

A utilização de novas fontes nutricionais na dieta de animais ruminantes produtores de leite é uma prática comum nas propriedades, no entanto, sua influência na avaliação sensorial dos produtos derivados do leite é pouco estudada. O objetivo deste trabalho foi avaliar a composição físico-química e sensorial do queijo tipo Boursin elaborado com leite de cabras submetidas a níveis crescentes de substituição do milho pela raspa de mandioca na dieta. Foram utilizadas oito cabras Alpinas em lactação, distribuídas em dois quadrados latinos 4 x 4 submetidas aos níveis de substituição 0, 33, 66 e 100% do milho da dieta por raspa de mandioca. Foram elaborados queijos com leite individualizado de cada cabra para as análises físico-químicas, rendimento e textura. Para análise sensorial, os queijos foram elaborados com o leite de todos os animais de um tratamento. A análise sensorial foi realizada quanto ao sabor e textura, com 50 provadores não treinados, utilizando o teste de diferença do controle e o teste de aceitação. Os queijos dos quatros tratamentos não apresentaram diferenças no teor de gordura, proteína, sólidos totais, acidez, umidade e cinzas, no pH, rendimento e parâmetros de textura: gomosidade, coesividade, dureza e mastigabilidade. A análise sensorial indicou que os queijos não apresentaram diferença na aceitação sensorial de sabor e textura entre os níveis estudados, indicando que a substituição de raspa de mandioca não foi percebida pelos provadores. O leite produzido por cabras alimentadas com níveis crescentes de raspa de mandioca em substituição ao milho pode ser usado na fabricação de queijos tipo Boursin sem trazer prejuízos à composição físico-química, textura e avaliação sensorial.

The use of new sources of nutrition in the diet of ruminants milk producers is a common practice in the properties, however, its influence on sensory evaluation of dairy products is poorly studied. The objective of this study was to evaluate the physicochemical composition and sensory type Boursin cheese made from milk of goats exposed to increasing levels of substitution of corn by cassava in the diet. Were used eight Alpine goats in milk, divided into two Latin squares 4 x 4 subject to replacement levels 0, 33, 66 and 100% of the corn the diet for cassava. Individualized cheeses with milk from each goat for physico-chemical, yield and texture analyzes were prepared. For sensory analysis, the cheeses were produced from the milk of all animals of a treatment. Sensory analysis was performed for flavor and texture, with 50 taster untrained, using the test of difference from control and acceptance testing. The cheeses of the four treatments showed no differences in content fat, protein, total solids, acidity, moisture and ash, pH, yield and in texture parameters: gumminess, cohesiveness, hardness and chewiness. Sensory analysis indicated that the cheeses showed no difference in sensory acceptability of flavor and texture between the studied levels, indicating that the substitution of cassava was not perceived by the tasters. The milk produced by goats fed increasing levels of cassava replacing corn can be used in manufacture of cheese Boursin type without harming the physical and chemical composition, texture and sensory evaluation
