Revalorización de los subproductos enológicos

Abstract

A lo largo del proceso de elaboración del vino se generan grandes cantidades de residuos que, debido a su composición química, constituyen un punto de interés en la industria vitivinícola por los diversos beneficios que pueden aportar. La posibilidad de que estos residuos puedan ser utilizados en nuevos procesos hace que sean considerados subproductos y que se reduzca la contaminación que supondría su eliminación. La utilización de los subproductos de vinificación en el propio proceso de vinificación puede mejorar la calidad del vino.
