El agua es un elemento fundamental en la fabricación de la cerveza, llegando a constituir entre el 85 y el 90 % de esta bebida. Tal es su importancia que antiguamente, cuando no existían las redes de suministro de agua, las cerveceras construían sus fábricas cercanas a manantiales de agua, debido a la gran cantidad de agua necesaria, además de la necesidad de que el agua presentase unas características determinadas y lo más constantes posibles, de esta forma, la cerveza presentaría un sabor lo más homogéneo posible. En ocasiones, al intentar reproducir una instalación de producción de cerveza en otro lugar diferente al original, al utilizar un agua distinta, la cerveza pierde su sabor original.
