The aim of this work is to analyze how sugar business speech was elaborated the at the end of the XIXth century and the role played by the Centro Azucarero in the construction of a “sugar” consensus. Likewise, I will try to determine which were the elements that used the Revista Azucarera (monthly publication of the Centro Azucarero Argentino) to formulatemanagerial speech that was articulated concerning the defense of the protectionism in order that all the manufacturers felt represented by it. On the other hand, there will be contemplated the gravitation that the crises of overproduction had in the life of the sugar trade union and how the tensions and conflicts that existed among the sugar manufacturers were reflected in the monthly publication.
