Abstract

Introducción: la alimentación del niño debe ser variada,agradable y acorde a sus necesidades nutricionales; actualmentesuele ser alta en calorías y sodio, y baja en fibras. Laquinua es un pseudocereal que por su perfil nutricional seconsidera completo, nutritivo y saludable para el desarrollode alimentos destinados a niños.Objetivos: realizar un postre a base de quinua, principalmentedestinado a niños, considerando el bajo consumo de fibras y lasexcelentes propiedades nutricionales de este pseudoceral.Materiales y métodos: se realizaron cuatro formulacionesy se seleccionó la que presentaba las mejores característicassensoriales y menor porcentaje de exudación. A la formulacióndel postre seleccionada se le evaluó el grado de satisfaccióncon 84 niños de edad escolar, la composición centesimal,el porcentaje de adecuación de fibra alimentaria y deedulcorantes y el perfil nutricional. Luego se relevó la composiciónde 21 postres comerciales para niños y se compararon.Resultados: se seleccionó la formulación 4 por presentarlas mejores características sensoriales y menor exudación. Elcontenido de fibra del postre fue de 1,9 g/100 g de alimento,su cantidad de edulcorante fue adecuada y su perfil nutricionalsaludable. Al compararla con otros postres del mercado,aportó fibra y menos cantidad de grasas totales, grasas saturadasy sodio. El grado de satisfacción por los niños encuestadosmanifestó una valoración positiva del 82% y obtuvo tansólo un 5% de valoración negativa.Conclusiones: se logró formular y elaborar un postre saludablea base de quinua con aporte de fibra y características sensorialesaceptables, orientado a aumentar la disponibilidadde alimentos que favorezcan el aporte de fibra en los niñosen etapa escolar.

Introduction: the feeding of the child must be varied, pleasant and according to their nutritional needs, currently it is usually high in calories and sodium and low in fibers. Quinoa is a pseudocereal that due to its nutritional profile is considered complete, nutritious and healthy for the development of foods intended for children. Objectives: it is proposed to make a quinua-based dessert mainly for children, considering the low consumption of fibers and the excellent nutritional properties of quinoa. Materials and methods: four formulations were made and the one with the best sensory characteristics and the lowest percentage of exudation was selected. The formulation of the selected dessert was evaluated the degree of satisfaction with 84 children of school age, the centesimal composition, the percentage of adequacy of dietary fiber and sweeteners and the nutritional profile. Then the composition of 21 commercial desserts for children was checked and compared. Results: formulation 4 was selected because it presented the best sensory characteristics and the lowest exudation. The fiber content of the dessert was 1.9 g/100 g of food, its amount of sweetener was adequate and its nutritional profile healthy. When compared to other desserts on the market, it provided fiber and less total fat, saturated fat and sodium. The degree of satisfaction expressed by the children surveyed showed a positive assessment by 82% of the children and had only a 5% negative rating. Conclusions: it was possible to formulate and elaborate a healthy dessert based on quinoa with fiber intake and acceptable sensory characteristics, aimed at increasing the availability of foods that favor fiber intake in school-age children.
