Control de Listeria monocytogenes en salmón ahumado mediante la aplicación de bacteriocinas producidas por bacterias lácticas

Abstract

Se evaluó la capacidad inhibitoria de tres sustancias antibacterianas producidas por bacterias lácticas frente a Listeria monocytogenes Lsa 4/00 en medio de cultivo y en salmón ahumado en frío envasado bajo vacío y almacenado a 3.5 ± 0.5°C durante 20 días. Cuando se ensayó el efecto de lactocina 705 producida por lactobacillus curvatus CRL705, nisina (Nisaplin(TM)) y la sustancia tipo bacteriocina producida por Carnobacterium piscicola L 103 en forma individual, en medio TSB a 25°C durante 72 h, se observó una cintérica bactericida con lactovina 705 y nisina. El efecto de la primera fu significativamente menor que el de la nisina, mientras que ésta permitió un re-crecimiento de Listeria luego de las 48 hs de incubación. La estrategia más eficiente fue la combinación de las tres bacteriocinas produciendo una disminuciión de los viables a <10 células/ml. La aplicación de las bacteriocinas en forma de spray a trozos de salmón mostró un efecto bacteriostático impidiendo el crecimiento de L. nonocytogenes hasta los 15 días de almacenamiento. El uso de una combinación de bacteriocinas podría ser un mecanismo efectivo para reducir la presencia de L. monocytogenes en alimentos como salmón ahumado en frío, limitando además la presencia de células resistentes a las bacteriocinas.
