La naranjilla (Solanum quitoense) es un fruto climatérico andino, conocido por un alto contenido de fenoles, capacidad antioxidante y vitamina C. Es una de las frutas exóticas más apetecidas en los mercados nacionales así como en los internacionales, debido a su sabor y color, que la hacen atractiva en comparación con otros productos. El objetivo del presente trabajo fue realizar la caracterización de la naranjilla común en tres estados de madurez: inmadura, madura y sobremadura.
