El derecho a la comida como derecho a la salud

Abstract

La ciencia ha invadido el campo de la vida convirtiéndola en datos biológicos. En ese derrotero la comida se ha vuelto alimento, nutriente. Sin embargo, el cuerpo humano es algo más que la suma de fenómenos que describe la biología, menos aún una máquina: es un nudo de significaciones que pivota sobre todo sobre la comunicación y las relaciones que establece con otros y lo otro que es el mundo en que vive. El alimento ha sido pensado como el combustible que hace funcionar una máquina, definición que lo hace neutro que le quita el valor de relación y comunicación que tiene la comida como parte del ejercicio de la vida del hombre. El hombre no se alimenta, come. Comer tiene que ver con la historia, el lenguaje, el conocimiento, la convivencia, la creatividad, la religiosidad. Por ello el hambre no es fundamentalmente carencia de alimentación sino de comida. La salud no significa carencia de enfermedad sino posibilidad de vivir el presente plenamente y de proyectarse al futuro. La bioética reclama el respeto por la vida, por la dignidad, por la igualdad para lograr una forma de vida saludable, el nombre de la justicia aquí es reivindicación de formas de vida que puedan plasmarse como potencia. El hambre es el nombre más claro e irreversible de la impotencia y el modo de superarlo no es desarrollar planes y dietas nutricionales, sino darles sentido a estas, dentro del marco del alimento como comida y la comida como garantía de salud.

A ciência invadiu o campo da vida, convertendo-a em dados biológicos. Nesse caminho, a comida se tornou alimento, nutriente. Não obstante, o corpo humano é algo mais que a soma de fenômenos que descrevem a biologia, menos ainda uma máquina: é um entrelaçado de significações que orbitam principalmente sobre a comunicação e as relações que estabelecem com outros e o outro, que é o mundo em que vive. O alimento foi pensado como o combustível que faz funcionar uma máquina, definição que o torna neutro, que subtrai o valor da relação e comunicação que tem a comida como parte do exercício da vida da pessoa. A pessoa não se alimenta, come. Comer tem a ver com a história, a linguagem, o conhecimento, a convivência, a criatividade, a religiosidade. Por isso, a fome não é fundamentalmente carência de alimentação, mas de comida. A saúde não significa ausência de doença mas sim a possibilidade de viver o presente plenamente e de poder se projetar para o futuro. A Bioética exige o respeito à vida, à dignidade, à igualdade em conseguir uma forma de vida saudável; o nome da justiça aqui é reivindicação de de formas de vida que possam se plasmar como potência. A fome é o nome mais claro da impotência e o modo de superá-la não é desenvolver planos e dietas nutricionais, mas antes dar-lhes sentido, tendo como marco referencial o alimento como comida, e a comida como garantia de saúde.

Science has invaded the field of human life by converting it into biological data. In this course, food has become nourishment, nutrients. However, the human body is more than the sum of phenomena described by biology, still less a machine: it is a knot of meanings. The human body pivots above all on the communication and relationships it establishes with others and the other that is the world in which it lives. Food has been thought of as the fuel that makes a machine run. This definition makes it neutral and takes away the value of relationship and communication that food has as part of the exercise of man’s life. Man does not feed himself, he eats. Eating has to do with history, language, knowledge, coexistence, creativity, religiosity. That is why hunger is fundamentally not a lack of food but of eating. Health does not mean lack of disease, but the possibility of living the present fully and of projecting oneself into the future. Bioethics calls for the respect for life, for dignity, for equality to achieve a healthy lifestyle. The name of justice, for her, is vindication of forms of life as potentiality. Hunger is the most clear and irreversible name of impotence. The way to overcome it is not to develop nutritional plans and diets, but to give them meaning, within the framework of food as eating and eating as a guarantee of health.
