Desarrollo de queso untable funcional a partir de lactosuero

Abstract

El objetivo fue desarrollar Quesos Untables Funcionales (QUF) con eliminación de un compo­nente perjudicial (colesterol) y la fortificación con minerales esenciales benéficos (zinc y hierro), y vita­minas liposolubles (A, D, E), utilizando un subpro­ducto de la industria láctea quesera, como el lacto­suero, en su mayor parte desechado y muchas veces en forma antirreglamentaria. Además se buscó esta­blecer la comparación de sus principales caracterís­ticas con un Queso Testigo comercial de primera marca del mercado Argentino (QU C), y un Queso Control sin colesterol de elaboración propia (QU A).
