Abstract

El Manual Cocinas Soberanas explica la importancia de la seguridad e inocuidad alimentaria, de las enfermedades de transmisión alimentaria y de los tipos de contaminación de alimentos, principalmente en relación al uso e higiene de las instalaciones. Los autores ofrecen información que abarca desde la recepción de la materia prima hasta el almacenamiento del producto terminado, estructurado en 6 capítulos, acompañados de ilustraciones claras y didácticas.
