Abstract

El desarrollo de nuevos productos es una actividad esencial para la supervivencia y competitividad de las empresas. Este proceso contempla diferentes etapas, que abarcan desde la identificación de las necesidades de los consumidores hasta el lanzamiento, seguimiento y retiro del producto en el mercado.En el caso de las industrias productoras de alimentos, la Gestión del Proceso de Desarrollo de Productos reviste una importancia crucial, debido al escenario competitivo en el que se desenvuelven. Sin embargo, en estas empresas se observan distintos grados de sistematización del proceso. En este sentido, el Nivel de Madurez brinda pautas sobre el grado en que las mejores prácticas se institucionalizan y se hacen efectivas en la organización. La literatura seleccionada reconoce cinco Niveles de Madurez: Básico, Intermedio, Medible, Controlado y Mejora Continua.En el presente trabajo se realiza un diagnóstico del nivel de madurez de la Gestión del Proceso de Desarrollo de Productos en empresas productoras de alimentos del Gran Santa Fe (Argentina). Se seleccionan once empresas pertenecientes a tres sectores de actividad económica, definidos en función de su importancia para la región (lácteos, insumos y carnes) y se lleva a cabo un estudio descriptivo mediante la aplicación de un cuestionario semi-estructurado. Entre las principales conclusiones, se observa que las empresas entrevistadas poseen Niveles de Madurez Básico e Intermedio. Particularmente, se advierten notorias diferencias con relación al tamaño de las empresas (a mayor tamaño, mayor grado de sistematización del proceso del PDP y mayor nivel de madurez).

The development of new products is an essential activity for the survival and competitiveness of companies. This process involves different stages, from the identification of consumers needs to the launch, follow-up and recall of the product in the market. At food producing industries, Product Development Process Management has an important role, due to the competitive environment in which they operate. However, in these companies’ different levels of the process systematization are perceived. In this sense, Maturity Level provides guidelines to observe which best practices are institutionalized and become effective in the organization. Selected literature recognizes five maturity levels: Basic, Intermediate, Measurable, Controlled and Continuous Improvement. This paper presents a diagnosis of the maturity level of Product Development Process Management on food companies Santa Fe (Argentina). Eleven companies belonging to three sectors of economic activity, selected according to their importance for the region (dairy products, inputs and meat) are selected. A descriptive study is carried out through the application of a semi-structured questionnaire. Among the main conclusions, it is observed that companies interviewed have Basic and Intermediate Maturity Levels. Particularly, there are remarkable differences in relation to the company size (to a larger size, larger degree of PDP process systematization and higher maturity level).
