Proteínas de trigo

Abstract

Las proteínas son uno de los principales componentes del grano de trigo, su contenido en la mayoría de las variedades comerciales varía aproximadamente entre el 8 al 16% p/p – calculado como el contenido de nitrógeno x el factor 5,7 (g proteína/g nitrógeno). A finales del siglo XIX - principios del siglo XX, Osborne clasificó a las proteínas vegetales de acuerdo a su solubilidad en diferentes solventes, procediendo a su separación por extracciones sucesivas. Este procedimiento ha sido utilizado desde hace muchos años para separar y clasificar las proteínas de trigo en cuatro grupos.
