Abstract

Los materiales para elaborar los envases empleados en la Industria de Alimentos pueden ser polímeros plásticos, celulósicos, vidrios ó metálicos. Los envases funcionan como contenedores de los alimentos, brindan protección contra agentes externos (ej. polvo, microorganismos, humedad, etc.), presentan al alimento en una forma conveniente, fácil de consumir y además atraen a los consumidores por su presentación e informan acerca de su contenido, características nutricionales, entre otras funciones (Robertson, 1993; Jenkins, 1991). El envase por sí mismo no es un material inerte y puede transferir sustancias hacia el alimento envasado. Por razones de salud, se debe asegurar que no exista sustancias procedentes del envase que migren hacia el alimento y que puedan provocar que represente un riesgo toxicológico, que organolépticamente sea inaceptable para el consumidor o que esté contaminado (Watson, 1995).
