Procesos de tratamiento y valorización de efluentes de la industria cervecera

Abstract

Durante el proceso de producción de cerveza se generan distintos efluentes. Los efluentes de lavado de máquinas y equipos representan el mayor volumen, y son tratados en plantas compuestas por reactores anaeróbicos, seguido de reactores aeróbicos. Ciertos efluentes de alta carga orgánica como el excedente de levaduras y la cervecza de descarte, pueden generar inconvenientes en los sistemas de tratamiento, si son mezclados con las corrientes de lavado. El excedente de levaduras consiste en una suspensión de levaduras en cerveza y representa hasta un 3% del volumen de cerveza producida. La cerveza de descarte comprende la cerveza rechazada internamente y la cerveza que retorna del mercado y representa 0,6-1% del volumen de cerveza producida. En esta tesis se estudio la utilización de estos efluentes como materia prima de procesos productivos. Se evaluaron los aspectos técnicos y económicos de la recuperación de etanol a partir de la fracción líquida de estos efluentes; La producción de bioetanol adicional por fermentación alcohólica de los carbohidratos remanentes; y la producción de ácido acético (vinagre de cerveza) por fermentación en cultivo sumergido utilizando la fracción líquida de estos efluentes. La recuperación de etanol, seguido de la hidrólisis y fermentación de la vinaza, permitió una reducción de la carga orgánica en un 88%, resultando a su vez un proceso económicamente rentable. La producción de vinagre de cerveza, prácticamente elimina las necesidades de tratamiento, siendo un proceso sumamente rentable con un período de recupero del capital de 2 meses.

Several wastewaters are generated in the brewing process. Washing effluents from machines and equipment represent the largest volume and are treated in plants that include anaerobic and aerobic reactors. Certain effluents with high organic load, such as surplus yeast and discarded beer can generate drawbacks in the treatment systems if they are mixed with the washing streams. Surplus yeast consist of a yeast suspension in beer and representing up to 3% of the volume of beer produced. Discarded beer comprises the internally rejected beer and the beer which returns from the Market, and represents 0.6-1% of the volume of beer produced. In this thesis the use of these effluents as raw material of productive processes was studied. The technical and economic aspects of the follows processess were evaluated: Recovery of ethanol from the liquid fraction of these effluents; Production of additional bioethanol by alcoholic fermentation of the remaining carbohydrates; and Production of acetic acid (beer vinegar) by fermentation in submerged culture using the liquid fraction of these effluents. The ethanol recovery, followed by the hydrolysis and fermentation of the vinasse, allowed a reduction of the organic load by 88%, resulting in turn an economically profitable process. The production of beer vinegar practically eliminates the treatment needs, being an extremely profitable process with a capital recovery period of 2 months.
